Easy Berry Mousse
Pour water into 4-cup measure. Sprinkle gelatin over water. Add boiling water; stir until gelatin dissolves. Add lemon, juice and rind, thawed berries, stir. Transfer mixture to blender; Blend 1 minute. return to measuring cup and refrigerate until mixture is partially set whip cream. Fold berry mixture. Spoon into serving dishes. Chill. Serves 4.
